2lbs. Chicken Wings, cut in half at the joints
2 Tbs. Spice Professors Jamaican Jerk Seasoning
1 tsp. Baking Soda
1/2 tsp. salt
2 Tbs. Grapeseed Oil
2 cloves of garlic, minced
1 cup of soy sauce
1/2 cup of honey
Directions:
Preheat the oven to 450 F degrees Rinse the chicken wings and then pat dry. Place them in a bowl and season with salt and Jamaican Jerk seasoning. Add the baking soda to the chicken - the baking soda raises the pH level of the chicken skin, allowing it get super crispy and delicious! Add 1 tbs. of the oil and mix to combine. Lay out the chicken on a wire rack and bake for about 18-25 minutes until crispy.
Meanwhile, prepare the sauce. In a large skillet, heat 1 tbs. of oil on medium heat and then add minced garlic, honey and soy sauce. Bring to a boil and allow to reduce until thick while constantly stirring. When the wings are ready, toss them in the sauce to coat and serve.
